My iPhone doesn’t seem to show any of the devices that I need it to screen mirror. How do I fix that? Im trying to screen mirror to a Roku tv.

Not mirroring. It's called AirPlay.
Check if your device and TV support it.
To do screen mirroring, make sure your iPhone and TV are connected to the same wireless network.
