iPhone keeps using wrong email address

My iPhone and iPad keeps using the wrong email address I erased them in the settings email and redo it but it keeps on going to the one I don’t want to use

iPhone 12 Pro Max, iOS 14

Go back to the mail settings. make sure you have absolutely deleted the mail account(s)m under subsection: Accounts.

if you have already done so, scroll all the way down to where it says Default Account. then select the preferred account. and that's it.
