How I can transfer files from my iphone to my Windows computer using an usb cable ? I only see the photos and nothing else when I connect the phone to the pc, where are the other files and how I can see them and share them to my computer ?

Windows Explorer is only supposed to expose the device's camera roll. See Use iTunes to share files between your computer and your iOS or iPadOS device - Apple Support or Use the Files app on your iPhone, iPad, or iPod touch - Apple Support and iCloud Drive to copy data to and from supported apps.
