Can I retrieve a deleted text conversation?

if you have a backup from before it was deleted and restore that

Before attempting to restore from a backup...

Go to Settings > [your name] > iCloud and check the switch position for Messages

If the switch is ON, then you cannot recover your deleted messages as they would not be contained in your iPhone backup.
