I downloaded Mac OS Big Sur and now cannot share my screen on a Zoom. All of my work is on Zoom and I need to share my screen.

You need to give Zoom permission to "record your screen" in System Preferences->Security & Privacy->Privacy, as I said above.
Here it is in pictures:
You probably received a notification to that effect.
Anyway, quit Zoom, go to System Preferences->Security & Privacy->Privacy, click Screen Recording.
Click the padlock and enter your password or fingerprint as requested.
If Zoom appears there, make sure it is checked. It not, click + to add it and check it.

Catalina and Big Sur have imposed greater restrictions to protect user privacy, so you have to deliberately give permission for applications to use your microphone and camera, to record your screen, etc, otherwise they are blocked from doing so.
But it is very simple to give the permissions that are necessary.

Are you saying that Zoom works, but you can't share your screen?
What happens when you try? Show us a screenshot of the error you get.

No. I actually wound up finding a fix in a different thread — if you go into Zoom —> Preferences —> Share Screen and select “Advanced capture without window filtering” rather than “Auto” under the Screen capture mode setting it works. Zoom seems to be aware that there is an issue with the Big Sur update.

I am curious whether this problem has anything to do with 11.3, as I am still at 11.2.3 and have no trouble sharing my screen, even though I have that setting you mentioned at "Auto".
You have to allow Zoom to "record your screen".
Contact zoom support or revert to the previous version of macOS you were running from your Time Machine backup.
Not sure how to access the Time Machine backup.

OK I'm also having this issue and Zoom is already checked for me in the screen recording setting so I don't think this is a fix?
I am the host. When I share my screen, the other participants only see a black screen. There isn’t any error — it’s literally just me sharing my screen on my side, my attendees seeing black.
Do you have any "antivirus" running on this mac?
