why does mac os big sur not support the MacBook pro15 inch mid 2012 and will it support it in future and provide an option for upgrade?

macOS Big Sur is compatible with these computers

Only Apple can explain why they have cut-off certain ages of machines from upgrading to Big Sur. As we are only fellow Apple Users - can not speak on behalf of Apple Decisions.
