How to re-create an earlier saved version of a project in Garageband. Is this possible or can I only see the latest saved version of a project?

GarageBand does not support versioning, afaik.

You should save intermediate versions on your own.

If you have Time Machine backups enabled, Time Machine will save local snapshots every hour (even if your Time Machine volume is not connected) and you could try to recover the earlier version from Time Machine. See: About Time Machine local snapshots - Apple Support
