Administrators cannot go through your personal information remotely. They can however access it if they have the device physically. It is generally considered best practice to not use an organization provided device for sensitive personal information. The device does belong to the school.
As for making it a normal iPad, you'll need to talk to your school's IT department about that. They are the only ones who can make that happen, but I suspect the answer will be a quick, "No."
