Since updating to Big Sur on my MacBook Pro, the Mail inbox only shows the Unread icon on the left of the email and no longer shows the flag icon. I can only see that an Email has been flagged once I click on it. How do I add this back?

Have you rebooted more than once since upgrading...
Have you tried a Safeboot to clear system cache files...

You can always try rebuild Mail box and see if it sorts your anomaly:
from Mail>Mailbox>Rebuild

from Mail>Mailbox>Rebuild
Rebuilding mailboxes is a very quick and easy procedure. Just select every mailbox in the sidebar and user the Mailbox ➙ Rebuild menu option. Takes about 1 minutes and can fix a multitude of problems.
The sort is in the View menu.
Where's the instruction on HOW TO USE MAIL? Did you think everyone would be fine without instruction?
What happen to the sort by above the mails? It's just another step I need to remember where it is?
I don't want to rebuild I just want to sort by type of mails so I can decide to either keep or delete!
