sorry, but blackhole does in fact work on macOS big sur 11.2.3. that's what my machine is running. if you want to hear and record the sound, you need to set up a multi-output device in your audio MIDI setup. i usually watch what i'm recording and i can both record AND hear the audio of what i'm recording with blackhole. you can go to this discussion where you will see how to set it up. and FYI other users there have confirmed that blackhole works on M1 machines.
if you have the paid app, you may want to contact them directly and ask why you can't get the sound to record.
if you're using the free version, i took this screen grab from their page:

if you've already tried that method and it won't work, i'll recommend the free BlackHole Virtual Audio Driver. it allows you to pass audio between the apps on your mac. this video will explain how to use blackhole:
i think i should add, if you can't get Movavi working properly, you should try using QuickTime. it's an app that comes on every mac and you can do screen recordings with it. using QT with blackhole works fantastic. recording movies and youtube videos is a big chunk of what i use my mac for.

It simply doesn't work with the current os update.
In order to make good use of BlackHole, you need to create, in Audio MIDI Setup, a "multi-output" device that includes BlackHole and your speakers, or other output source. This allows sound to go to both simultaneously, so you can monitor it.
I have been doing this for years using Soundflower, but the principle is the same.
It works beautifully. Set output to the multi-output device, set input to BlackHole, playback and record. You can do this with just Quicktime Player.

"grant ACE access on the GENERAL tab in the Security & Privacy...."
I suppose this means that this program installed a kernel extension, which you need to Allow

"Screen Recorder app"? are you using QuickTime or a different app?
I am using Movavi Screen Recorder, which was compatible with mac M1 chip
