Does the individual subscription cover only one person and one device or one person with 5 devices?

what one person wants to have 5 devices.

is individual or one of the other plans the one to select?

Individual covers one person, or more accurately one Apple ID. You can have up to 10 devices associated with a single Apple ID, a maximum of 5 of which can be computers.

So you can use the individual subscription with up to 10 devices that you own.
