I did a backup on a external hard drive (seagate) how do I upload to my new MacBook Air 2020?

The easiest way to set up your new Mac is to use the Migration Assistant: Move your content to a new Mac - Apple Support

As @6x6 Very correctly suggested - just do not move Applications from an Intel to New Apple Silicon M1 computer. The Older Applications may not be compatible on Big Sur and especially on the M1 CPU. Better to check the Developer of old computer application for compatible and or updates / upgrade for Big Sur.
