How can I use spellcheck and correction for Croatian language on my MacBook just as I do on my iPhone keyboard? It doesn’t make sense that it’s available in one case but does not seem possible in another.

MacOS and iOS are still very different in lots of ways. Spellcheck is one of them.
For MacOS you can sometimes add a language by downloading and installing .dic and .aff files.
