How do I back up my iPhone 11pro to my 2018 MacBook laptop, when I go to iTunes it just says something about a macOS update

With a Mac that has macOS 11.2, you use Finder to backup. See instructions in: Back up iPhone - Apple Support

iTunes was discontinued and replaced on Macs running macOS Catalina or later. See: What happened to iTunes? - Apple Support
