How can I customize my Finder menu bar?

After the upgrade to Big Sur my Finder menu bar is all messed up. How can I customize it? e.g. get rid of the big blank space at the left, add folders that I need frequently, etc.

Welcome to the new Apple design logic for Big Sur. It is not just Finder, but all of the Apple applications have had this toolbar redesign that you cannot change back to pre-Big Sur design.

The usual View menu > Customize Toolbar… feature remains but your additions are corralled on the right-side of the toolbar now.
