Click "Bookmarks" in the Safari menubar and choose “Edit Bookmarks” in the dropdown.

Safari > Bookmarks > Edit Bookmarks

Right click the folder to be renamed and choose “Rename” from the pop-up.

When the folder’s current name is highlighted, enter a new name and press “Enter”.

If the folder is in the Favorites bar, this will also change the name there.
