After a recent update (I'm now running iOS 14.6), all of my album art disappeared in Playlists except for the correct cover of the first album. Now all the art is of that album. Is there a way to fix this?

Is this music you lease with an Apple Music subscription? If so, the first (and simplest) thing to try if something isn’t working right is to restart your iPhone:

Or music you purchased from the iTunes Store or imported from a computer? If so, re-sync with your computer:
Sync your iPhone, iPad, or iPod using your computer - Apple Support

It's my own music, some I uploaded ages ago via CDs and some has been purchased online.
This is really frustrating as I have read numerous possible solutions and none work.
