iPhone SE (2nd Generation) won't connect/sync with Macbook Air.

For some reason, I can't connect/sync my phone (second gen iPhone SE) with my Macbook Air.

When the two are connected together via a USB/lightning cable, the phone appears on the Finder desktop for about half a second, then disappears, then reappears, then disappears, etc.. etc...

So I can't sync, transfer data across or do my usual backup.

Mac is a 2013 Macbook Air which is totally up to date (11.5.1) and my phone is also up to date too (14.7.1)

Any idea what could be causing the problem? I've also tried other cables (just in case the cable was at fault).
