Help!!! My wife’s iPhone 11 went bonkers. Randomly, when she pulled her phone out of her pocket, her entire contact list now had a new assigned photo. The SAME photo. And it wasn’t even a photo from my wife’s phone. How does she fix this without manually editing every single contact?

If her phone is backed up regularly (say nightly to iCloud) and no new backup has occurred, you should be able to erase the information on the phone and restore it from the previous backup.
