Wow! Can there really not be a button to put selected text back to 'Nomal' where it has been entered as a numbered list?
Am I missing something?

You are but it's not your fault. Select the list then choose "Indentation > Decrease" from the Format menu or press command + [

Highlight the bulleted list and click the Outdent option that will move the text to the left and remove the bullets / numbers.
