Big Sur via Terminal

sudo /Applications/Install\ macOS\ Big\ Sur.app/Contents/Resources/createinstallmedia --volume /Volumes/Untitled

Where the External Drive is formatted as HFS Journaled / GUID Partition Map and the Drive is named " Untitled "
