You don't, generally. If iCloud Messages is enabled, then the messages are deleted. If iCloud Messages is not enabled and if you have a backup and if you are willing to revert the entire contents of your iPhone to that backup, you might get the messages back. Or you ask the recipient to send you screenshots, as an alternative.
