As Tony pointed out all metadata is stripped from the image files when added to a Shared Album. This is for privacy purposes.

If you want to add titles you can use the Markup feature in Photos Edit mode to put the info on the image itself before uploading.

When you share a photo that has a caption, it will automatically be added as comment to the shared photo in the shared album. This is new in iOS 15 on the iPhone, iPad, and may become available in macOS 12 Monterey as well, when Monterey will be released.

On older system versions on a Mac I used to copy the title to the clipboard with ⌘c and to paste the copied title into the field "Add a comment" when sharing a photo. The subscribers will be seeing the comments in the Activity Steam or when clicking the tiny callout bubble on the shared photo, when viewing the shared photo in the shared album enlarged.
