Set up new iPhone
I used Quick Start to transfer data, but after three hours my apps seem frozen at only half-transferred. Any suggestions?

That does seem to have solved the issue. Although now the phone doesn't want to pair with my watch . . .
An Watch can only paired with one iPhone.
Did you first unpair from the old iPhone before pairing to the new iPhone?
