I have an iPad Air. Software is 12.5.5. I need 15 to run some new apps, but 15 is not one of the choices on software update.

An iPad Air 1st generation (released on 2013) cannot support iOS versions beyond 12.5.5, because of hardware (CPU/RAM) incompatibility, sorry.
