iOS 15 is not available for my iphone12 so I’m getting a message that I can’t pair my new watch (7) until I get version 15. Now what?

You might want to browse this. Apple Support article.

iOS 15 and iPadOS 15 are compatible with these devices

(You'll see a list of iPhone 12's ... is yours not listed ?)

If you have backed up your iPhone,

and have enough space for the update:

How to:

Update your iPhone, iPad, or iPod touch

And

Set up and pair your Apple Watch with iPhone

Hope this helps you :-)
