Updating iPad

How do I get my iPad to update to 14.8.1. It tried to update to most recent update 15 or something.

That's because that's the most recent update. You can't update to iOS 14.8.1 because it became unavailable when iOS 15 was released (current version 15.1). Why do you want 14.8.1 and not 15.1? When a new version of iOS is released, Apple discontinues the previous one.
