i would like to know if apple could buy my 2 iPhones 11 Pro Max 256gb, so i can by the new iPhone !

Apple will not buy them, but they do have a trade-in program. Go to https://apple.com, tap on iPhone, choose your phone and tap Buy. There will be a trade-in option that you can click.

The point is that i have 2 iphones to sell, and the trade option include only 1 device, not 2 …

You can trade in one 'old' iPhone for a new one, and it is not possible to trade in two 'old' iPhones for one new one.
