Apps do not transfer. They are actually downloaded to your new iPhone from the cloud - from the App Store. So you will get the same apps you had - as long as they are still available in the App Store. And, of course, you will get the current version of these apps.

To download them, use a good Wi-Fi connection with a well charged iPhone.
