Open Safari, tap on the overlapping squares in the lower right corner. When the open tabs appear, you should see # Tabs at the bottom center of the screen. Tap on that. When the box opens, tap on Private. This is how it works in iOS 15.3, Your profile indicates iOS 14, I would update your iOS for the security updates, but I don't remember the difference in iOS 14.
