Can I delete messages from my iPad but keep them on other devices?

Yes, however, you will have to turn OFF Messages in iCloud. Once you do this then the iPad will not synch with the other devices when you make changes to the message(s).

Open Settings ➡️ Apple ID (Your Name at Top) ➡️ iCloud ➡️ Messages: Set this to OFF.
