I have an iPhone 12. Somehow dark mode got switched on and when i try to toggle it off, it doesn’t do anything. Restarted the phone 3 times, also did the option to manually set up dark mode for next day, still did nothing. Other weird thing, its not normal dark mode. Every picture or image is a negative. I even went on Amazon store and every pic was a negative.

No, that's not a Dark Mode behavior.
Settings>Accessibility>Display & TextSize... disable ALL options (except the Auto-Brightness at the very bottom).
When done, restart your device and test it.
