Unknown emails have made purchases on my icloud backup?

Then if not you someone else or you use someone else apple id to purchase something. It wouldn't show that message if that didn't happen.

This happened with 3 separate emails which aren't known to me whatsoever and it's very concerning, how have 3 separate people made purchases which are linked to me & I know nothing about?

No, you at one pointed used a different Apple id to download/purchase apps, music etc.
