Hello, I currently use 2 older iMac desktops as a dual monitor setup using Thunderbolt cable to connect each imac. I'm considering buying a new Mac Mini as an upgraded processor.
My question is: Can I use the 2 iMac desktops as a dual monitor setup for the Mac Mini? Thank you

No sorry, none of the newer Mac's support Target Display Mode.

No. Not with a current M1 Mac mini as it does not support Target Display mode, and the old iMacs won't support Universal Control / Airplay to Mac.
