Safari is updated when you upgrade the operating system on your iMac.

The model year of an iMac is available at Apple menu > About This Mac.

A late 2009 through mid 2011 iMac can be upgraded to High Sierra 10.13.6 but no later version. See: How to get old versions of macOS - Apple Support

Since your iMac cannot be upgraded to a recent macOS version, you may want to consider installing and using another browser such as Chrome or Firefox. The current version of Chrome will run on OS X 10.11 or later. See: https://support.google.com/chrome/a/answer/7100626?hl=en
