all of my workouts have disappeared from my Apple Watch and the activity app seems to have reset itself, can I get my old data back?

Yes from your last icloud backup.

Apple Watch activity data How can I recover lost activity achievement and data? last week I restored my iPhone after it was rebooting on the apple logo.
