Why would my just standard everyday camera app all of sudden show a green dot in the upper right hand corner on my iPhone

That has been a feature since iOS 14.0. A green dot shows the camera is on, an orange dot shows the microphone is on. See→About the orange and green indicators in your iPhone status bar - Apple Support

ok, so just to clarify...
this green dot only shows up when I open the camera app. So this just indicates I'm using the camera? In other words, it doesn't mean ( sorry for being a little paranoid ) but it doesn't mean I'm being spied on by another app?
It just means you are using the camera. If you see it when you are not knowingly using the camera that means another app is using it. If you open the control center by dragging down from the battery icon the name of the app using the camera will show at the top of the screen.
The green light indicates that the camera is on. Whenever you see an orange dot it indicates the microphone is on.
