So my best friend and I track our locations indefinitely on the Find My app via Find My Friends.
Will either of be notified how many times we have checked each others profile or if its being done excessively or receive a log of such checks with the current iOS update?

No. The only notification sent to a Find My friend is if you set Find My to alert you when your friend arrives or departs at nominated locations - as explained in Get notified when a friend’s location changes in Find My on iPhone.
