Is it ok if I plug in my MacBook Pro while doing a high performance task to prevent running on low battery and unplug it when Im done?

It is preferred yes.
The rule of thumb —if you are near the mains leave it plugged in, if you need the portability run on battery only.
This is how you extend the working life of your battery.
