Yes, if you select an album in the sidebar of Photos, then ctrl-click, you can click "Sort" in the contextual menu and select "Sort by date (ascending or descending)". Only the very first version of photos had very limited sort options, but on macOS 12.3 you can sort any album you create yourself by date.
