I received notification that my late 2015 27 inch iMac has an update available. When I click on Software Update, the "Checking for updates" spinning thing never stops and goes no for days. How do I get past this?

Try rebooting the computer. If that still does not help, then boot into Safe Mode which will prevent third party software from automatically launching during boot & login (perhaps even some Apple drivers as well). See if Software Update will be able to finish checking.
