Change preferences and default settings in Numbers macOS

Where are more places to change settings, preferences for Numbers on macOS (Monterey 12.4)

When opening Numbers I want it to reopen all the spreadsheets that were still open when I last quit the app.  Right now it is opening with just a choose file browsing window.

I believe the setting you are asking about is in System Preferences/General. Deselect the setting that says "Close windows when quitting an app". It applies to all apps that support this, not just Numbers.
