Do you mean how to backup your iPhone or how to restore data from a backup? Use Finder on your Mac

Should be the latter:--> Restore your iPhone, iPad, or iPod touch from a backup - Apple Support

If you mean something different, please explain your needs better

iTunes is no longer available on a Mac running Monterey. As already stated you need to use Finder.

"Restore data from a backup" procedure assumes you backed up from iPhone to that Mac, before you "lost" the data on the iPhone, right?
