how do you mark an email not junk

Select the junk message. When you do that, the Junk icon in the toolbar changes to Not Junk. Click that and the message is returned to the appropriate Inbox for that mail account. Dialabrain's recommendation also works as it contains a Move to Inbox menu item.

If you control click on the email there should be a "Move to" option I believe.

I knew there is a not spam icon. I never receive junk mail so I didn't want to assume. :)
