Apple Watch Series 3 Sync Fails Due to Update Issues

Attempting to set up a Series 3 Apple Watch but it keeps failing the setup due to the watch needing to be updated. When I get to the screen to apply the update it fails and says I'm not connected to WiFi when I am. I've made sure the phone is up to date, I've restarted both devices, is there any way to work around this? Thank you!
