How do I download all NOTEs from iCloud to my laptop?
How can I download copies of ALL of my NOTES from iCloud to a folder on my laptop (that is not sync'd with iCloud)?

In notes preferences Change preferences in Notes on Mac - Apple Support
Enable the On My Mac account
Store notes on your computer using the On My Mac account.
Open notes app in iCloud section Keyboard shortcuts and gestures in Notes on Mac - Apple Support
Select the entire table
Command-A
Note: If your cursor isn’t in the table and you press Command-A, the contents of the entire note are selected.
And export notes as pdf file Import and export notes on Mac - Apple Support to a folder created in on my Mac section Add and remove folders in Notes on Mac - Apple
