if i have the apple watch 6 and have apple care and im trading for the 8 does the applecare transfer to the new watch or it cancels for the 6 and i get a new one for the 8?

No, it doesn't. AppleCare is for the device, not the Apple ID. You can cancel the balance of your AppleCare if you have any left, but will have to purchase new for the new Watch. Cancel or change the payment method for your AppleCare plan - Apple Support
