When I try to update my Late 2007 iMac from Yosemite to El Capitan, everything seems to work (download El Capitan from internet, begin install, etc) until the end of the installation. When I check which OS I am running (after the install), “About this Mac” still shows Yosemite.

Go to your Applications folder and look for an app called "Install El Capitan"
Double click on this app to install El Capitan.
