watchOS9.0 Change Workout Settings Missing

Since we moved to watchOS9.0, I noticed the workouts menu item is gone.

(From Phone: Apple Watch/MyWatch/Workout/Workouts)

Before you could select Swim, Run, etc and change the metrics display.

Has anyone found where they moved this?

(A good article showing how it used to work: https://www.imore.com/how-view-goal-metrics-workout-apple-watch )

Thank you. This is helpful. One edit?

The pencil is on the "Open" window to reach "Workout Views"

This got me in the general area.

The one thing still missing is the ability to enlarge the text on the WorkoutView display. It used to be much larger. I tried enlarging text on the Watch in general, but it enlarged everything EXCEPT the workout view.

I can live with this, but the total distance and other metrics used to be much larger - which is helpful during a 2mile swim. The larger text is easier to read on the go. (Even no-fog goggles have their issues. :-)
