Resetting to Factory Settings:
You may need to reset your old iPhone to factory settings, for it to be seen as new. Perform as instructed here, including the backup: Reset or Restore your Apple TV to its Factory Settings - Apple Support. You'll have to log back in to iCloud. All would be set to default, and any bugs and glitched would be fixed.
As for the phone number...
Contact your Carrier, asking them to configure the SIM or eSIM card to this new iPhone.
